I have never met a bakery I didn’t like and have been pleased to see so many new independent ones spring up (and survive…at least so far) in the ‘hood over the last few years. In my opinion, with Thomas Haas, Simply French, Baguette & Co., Plaisir Sucre and others, Kits has the whole “French Pastry” thing well covered, but that hasn’t stopped Jackie Ellis, a graphic designer turned pastry chef, from preparing to open Beaucoup Bakery at West 6th and Fir later this month (opening date not yet confirmed). In addition to French pastries, she will also offer sandwiches and other treats to Kitsilano/Fairview residents.

Prior to her Beaucoup venture, Ellis sold her goodies at the Shangri-la Farmer’s Market and attracted quite a following of foodies, not to mention a decent amount of local media buzz. The rumour is her salted caramel blondie is pretty amazing. I look forward to forming my own opinion when the bakery opens in the next few weeks.
