Bright colours, delicate, delicious and pillowy soft, macarons are one of the most famous and well-known desserts around.

Macarons are the delicious combination of two sweet meringue-based ‘cookies’ with a ganache, buttercream, or jam filling. Not to be confused with macaroons, which are a glorified coconut haystack held together by egg.

A Brief History of Bon Macaron

Bon Macaron brings the delightful french treat to the west coast. Owners Yann Fougere and David Boetti—native Frenchmen with extensive backgrounds in pastries and customer service—have opened three Bon Macaron locations including two in Vancouver (Kits and Granville Island) and the original shop in downtown Victoria.

While working in and managing numerous cafes and bakeries in Victoria, they dreamt up the idea of bringing a bit of France to the Canadian West Coast, while continuing to provide impeccable customer service. After many years arguing over France’s best dessert, the two finally agreed on the Macaron and its infinite flavour possibilities, and Bon Macaron Patisserie was born!

Bon Macaron Patisserie offers a vast and ever-changing variety of sweet and savoury macarons, made with the finest ingredients. Macarons offer all the pleasure of a rich, decadent treat, but are as light as air!

They consist of two meringue shells made out of egg whites and powdered almonds, and have various fillings created from lovely things like buttercream, ganache, preserves, or cream cheese. Macarons are gluten-free and are dairy-free flavours are always available. With their small size and weightless consistency, people can enjoy a selection of Macarons without feeling like they’ve over done it! And most importantly, each bite is a distinctive experience.

A Brief History of the Macaron

The macaron has an interesting history dating from the middle ages. Originally a small sweet cookie made of almonds, egg white, and sugar it was crunchy on the outside and soft on the inside. While the macaron was popularized in France it is believed to have been brought to France  from Italy in the 16th century by the chef of Catherine de’ Medici where it had been produced in Venetian monasteries since the 8th century. The macaron’s name is derived from the same word as macaroni meaning ‘fine dough’.

Originally, macarons weren’t served like little delightful sandwiches they were singular cookies until the early 20th century when the grandson of Louis Ernest Laduree of Laduree Patisserie, a business that’s been around for more than 250 years, had the idea to fill them with a “chocolate panache” and to stick them together.
