Thanksgiving recipe: Terra Breads dried fruit and pecan stuffing

I am hosting a traditional Canadian Thanksgiving dinner on Sunday. My guests include friends from Brazil, France, Germany and Africa who are now all proud Vancouverites. Of course, a traditional meal wouldn’t be complete without stuffing, and thanks to Terra Bread’s Dried Fruit and Pecan Loaf, I can make a gourmet tasting dish with ease.

I have made this recipe many times. It is perfect as written but it is also pretty forgiving – a little extra of this and a little less of that works fine. Their Cranberry Pistachio bread works well too.

I have shared this recipes with many friends and family and, since the entire thing relies on staple from Kits’ Terra Breads, thought it was worth sharing with my neighbours too.

Recipe

Ingredients:
1 loaf of Terra Breads Dried Fruit and Pecan Bread
1 cup butter
1 large sweet onion, chopped
1 cup chopped celery with leaves
2-3 apples cored, but not peeled, finely chopped
1 cup dried cranberries
1 cup diced pecans (or candied pecans)
1 tbsp each of thyme, sage, savoury, marjoram or 4 tbsp of poultry seasoning
Salt, pepper and chopped parsley to taste

Method:
Chop vegetables and apples
Melt butter in large frying pan over low heat.
Add vegetables and sauté until soft and translucent.
Add apples, and cook a few minutes more so apples are heated through.
Stir nuts and cranberries into bread crumbs
Add herbs and spices.
Stir in vegetable/apple mixture and lightly toss.
Taste and correct for seasoning.
Fill turkey lightly with dressing (both neck and body) after rubbing salt into turkey cavities or put in casserole with enough chicken or turkey broth (about 1 cup) to moisten sufficiently, cover, and cook with turkey for the last hour.
