If the only thing between you and homemade kimchi is confidence, get your butt to the upcoming Flavourful Ferments: Krauts and Kimchi workshop at UBC Farm September 24.

You’ll get a brief history of ferments and basic techniques for a variety of krauts and kimchis. Demonstrations will be given on preparing a sauerkraut and a kimchi, and participants will have an opportunity to make their own jar to take home.

The class fee is $40 ($32 for registered students — valid student ID is required) + GST.

The teacher is Julian Napoleon. In addition to having a catchy name, his qualifications include being is a farmer, student, and devoted urban homesteader. Cooking, curing, preserving, hunting, fishing, and foraging are amongst Julian’s favorite pastimes. Nearing completion of a Food and Environment degree in UBC’s Faculty of Land and Food Systems, Julian will soon be establishing his own mixed livestock operation focused on producing fine charcuterie.

If you can’t make this one, check out the wild mushroom foraging and backyard chicken classes coming up in late September and early October.
